Batch Cooking #2 - Meatballs

The Basics

Meatballs are a easy delicious high protein food that can easily be cooked in large batches. Take about 3 lbs of 93% lean grass-fed ground beef and combine with a variety of flavors and seasonings, plus egg and flour/ground flax seed/ground hemp seed/etc.

The Details

3 lbs grass-fed ground beef

3 eggs

About 1/3 cup of some type of flour combo (see above)

Various seasonings:

  1. 1 tsp dried oregano, 1 tsp dried basil, 1 tsp salt

  2. 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp salt, chopped fresh mint

  3. 1 tsp garam masala, 1 tsp curry powder, 1 tsp salt

  4. 2 tsp za-atar, 1 tsp salt, chopped fresh parsley

Make into 1/2 inch diameter balls or smaller. Bake for about 15-20 minutes at 350 degrees. Enjoy on pasta, inside stews or a quick on-the-go snack.
