Lentil Dal












Ingredients:

2 cups red or yellow lentils (yellow lentils will work as well)

6 cups water

2-4 tsp olive oil

1 cup finely chopped white or yellow onion

4 medium cloves garlic, minced

1 tsp sesame seeds

1 tsp cumin seeds

1 tsp fennel seeds

1 tsp mustard seeds

1 bay leaf 2 tsp turmeric

1 tsp salt (add more later if needed)

2 limes, juiced

15 cherry tomatoes, halved

10-15 sprigs cilantro, de-stemmed and chopped


Directions:

Rinse lentils. Add to the saucepan with water and bring to a boil. Reduce heat and simmer for about 10 minutes or until lentils are soft.Heat olive oil, add chopped onions and cook for about 5 minutes. Add garlic and all spices. Saute for an additional 3-5 minutes.

Add cooked lentils, along with the cooking water, to the saute pan. Cook for about 10 minutes.

Add lime juice and tomatoes. Cook for an additional 5 minutes. Adjust salt if necessary.Remove from heat and stir in cilantro.Top with yogurt and your favorite protein. Add more cilantro for garnish.
