Burger with Sweet Potato Bun

Ingredients:
Ground grass-fed beef or turkey of your choosing
1 large sweet potato
½ tablespoon olive, avocado or coconut oil
Salt and pepper to taste
Directions
Peel the sweet potato. Cut the potato into 1/4-1/2 inch rounds.
Drizzle some olive oil on them and sprinkle some salt and pepper.
Heat a skillet on medium heat. Add 1/2 TBS oil.
Once hot, add the sweet potato rounds. These cook fast! About 3-4 minutes on the first side and only 2-3 on the second.
Serve as you would a hamburger bun
Cook your burgers as you like.
Yummy toppings to go in between your “buns” = grilled onions, grilled mushrooms, avocado, sliced tomato, cole slaw (see above), sauerkraut
