Veggie Chili

Ingredients
Olive oil
1 onion
2 carrots
4 peppers – a variety of mild ones (bell, banana, etc.)
Garlic – a couple cloves chopped
1 tablespoon cumin
½ cup dried black beans or 1 can of cooked
½ cup dried kidney beans or 1 can of cooked
½ cup dried garbanzo bean or 1 can of cooked
Tomatoes – roughly 10 medium sized, chopped
1 hot pepper – serrano or jalapeño
Salt to taste
Directions
If beans are dried, then cook the black beans for about 1 hour, a cook the the kidney and garbanzo beans for about 2 hours. Drain all beans. Saute onions, carrots, mild peppers, garlic and cumin for about 10 minutes. Add beans, tomatoes and hot pepper and bring to a boil. Add salt and simmer for about 30-40 minutes. About 6-8 servings.
For added protein add a scoop of yogurt on top and/or add ground beef, chicken or turkey to the bottom of the bowl and ladel chili on top.
Garnish with fresh cilantro.
